lemon barley salad

2 cups

ingredients

  • pearl barley seeds - ½ cup

  • tomato - ½ pc

  • lemon - ½ pc

  • mint leaves - 1 sprig

  • spring onion - 2 pc

  • fresh red chilli - 1 pc

  • water - 1 cup (to cook barley)

  • black pepper powder - ½ tsp

  • rock salt (pink Himalayan) - to taste

  • extra virgin olive oil - 1 tbsp

steps to do

  1. combine salt and water in a medium saucepan, bring it to a boil.

  2. add in the barley and let it cook for 30 minutes in low flame.

  3. remove from the flame and let it sit for 5 minutes.

  4. add chopped spring onion, red chili, tomatoes and mint leaves.

  5. combine salt, pepper, lemon juice and olive oil. mix well and serve.
